One of our all time favorites! It’s a must dish when my son visits home even if it is for only a day. I have no issues doing this dish it is one of the easiest dishes to make and also the layering of basmati rice with the spices, onions, garlic, ginger, green chillies and tomato brings about a blast of flavors along with whole spices.
Ingredients:
- Basmati Rice – 2 cups
- Red Onion – 1 large ( You can use white or yellow as well)
- Garlic – 8-1- pods
- Ginger – 1 tsp crushed
- Tomato – 2 large
- Green chillies – 7-8 (as much as you need)
- Cinnamon – 2 sticks
- Bay leaves – 2
- Cloves – 5-7
- Cumin seeds – 2 tsps
- Fennel seeds – 2 tsps
- Cardamom – 1-2 pods
- pepper – 3-4
- Turmeric powder – 1 tsp
- Chilly powder – 1 tsp
- Coriander powder – 1 tsp
- Cumin powder – 1 tsp
- Garam masala powder – 1 tsp
- salt to taste
- Clarified butter (ghee) – 1 tbsp
- Oil – 3-4 tbsps
Method:
- Wash the rice and keep aside. Chop onions, green chillies and tomatoes. Crush garlic and ginger. Assemble the spices and the powders required.
- In a pan heat the oil and ghee and add the bay leaves, cinnamon and rest of the spices. Let it splutter.
- Now, add garlic, ginger, green chillies and the onion. Fry until the onion is translucent and add the tomatoes. add all the spice powders.
- Cook the mixture and add it to the washed rice. Add enough water to cook the rice. It is important not to add too much water.
- Microwave for 20 minutes. You can also cook this on a heavy bottomed pan over a stove top or in a pressure cooker.
- Serve this delicious complex flavored rice with raita.
- You can make raita by chopping an onion and tomato and mix it with yogurt and add a little salt to taste.
